An Unexpected Event



Beautiful summer night, warm, light breeze and the bike trail was calling us to ride. After trekking for 7 miles we passed a little girl on a bike that was too big for her and then her father who was pulling a sibling in a bike trailer. It was time for a break as witnessed by the drops of sweat that had begun to drip down my back so we decided to turn to the left of the trail. "Let's go over here so we aren't in the way of that family", suggested my friend Catherine.

Then it happened! I barely had time to take my foot out of the pedal and place it onto the ground. Bam! She ran her bike down a dirt path and right into my back wheel.  I tried to stay upright, by firmly planting my feet on the ground to not make matters worse. Then off she went, unaware of any injury to me or to the bike.  The bike had minor scrapes, the tire needed to be readjusted and my back hurt a little.  

Ever have something that just hit you out of the blue? These can be physical or emotional. Out of nowhere we can be hit with illness, or accidents. One day we can wake up and not want to get out of bed. The emotional ones can almost be worse. The ups and downs of the waves of feelings that follow can seem to tear us apart. 

These unexpected events will come at some time in our lives, the question is how will be get through it? 
How do we stay firmly planted?
How do we stay upright? 

Knowing the one who can set our feet on solid ground is the only way I know!

Paleo Bacon Wrapped Dates

Otherwise known as meat candy, this tasty appetizer is pleasing to Paleo and non Paleo friends!



I followed the recipe that The healthy Housewife shared except that I omitted the cashews.  As a tester I made one with cashews inside the date and one without. The result Simple is better! Really and truly these are delicious! Mouth watering bacon and the sweetness of the date, perfect! I made them an hour before my guests arrived and then just heated them up.  There wasn't one leftover!

First lightly cook the bacon- This helps to make it crispier later and it will roll around the date nicely. Then cut the bacon in half before your roll it.



After rolling the date in bacon secure it with a toothpick and place it on parchment paper.
The directions said to bake for 10 minutes, but I cooked then for about 14 minutes. I like them crispy!




This is a keeper!
What I learned

Sometimes you have to try things for yourself to make a decision. Just because someone else has recommended something or told you that this or that is the best may not be true for you.  There is only one authority that I will always believe, always trust in always put my hope.  God's word and His love

What's in a name?




In the news recently a mother wanted to name her son "Messiah".  She received an unsatisfactory response from the court. 

"The word Messiah is a title and it's a title that has only been earned by one person and that one person is Jesus Christ," the judge said. 
I applaud the judge's firm response whether or not the ruling stands. This made me think about what is in a name. Do you know what the meaning behind your name is?  Does it matter?  Do people treat you any different because of your name?

Meaning of "Jan"In Scottish, the name Jan means- God has been gracious. A diminutive of Janet, which is a feminine form of John.

I love that my name is a blessing to God!

This also reminds me of the names that God calls us; Beloved, child, chosen, bride, church, saints. He tells us who we are. No matter what your earthly name is He says that you are so much more.

What can I make with Dates?




Before I began the journey known as Paleo I didn't even know what a date looked like! Now I have to practice self control because they are so sweet and delicious! 

The date has been grown for centuries.  Each date is rich in vitamins and minerals, they are an plentiful source of fiber and energy.  Best when used as a healthy Paleo snack, dates have no fat, sodium or cholesterol and are rich in fiber and potassium. To read more about dates and Paleo, the Paleo List writes a nice article describing the benefits of dates.

What I learned

Even though dates are natural they are filled with natural sugar and should be eaten in moderation. As Christians we have been given a life of freedom. Freedom to make choices, freedom to worship, freedom from the law.  In this freedom we have also been given the command to be careful. 

In our Freedom-Be Wise
Be very careful, then, how you live--not as unwise but as wise, Ephesians 5:15

In our Freedom -Be Considerate
Therefore, if what I eat causes my brother or sister to fall into sin, I will never eat meat again, so that I will not cause them to fall. I Corinthians 8:13

In our Freedom- Be thankful for grace
What then? Shall we sin because we are not under the law but under grace? By no means! Romans 6:15

In our freedom-stand firm

Pressure Washer


This was the day that I was going to tackle the house.  Slowly but surely, siding by siding the mildew had grown.  Our once white home had turned a lovely shade of green! It was way passed time for some deep cleaning.  The only way to achieve the sparkly effect that I was looking for was to bring out the big guns, that's right the pressure washer!


After a few attempts of pulling the starter cord, the engine began to hum right along and it was time to begin the spraying.  Because this is one powerful machine, it was necessary to be careful as I was spraying to not go under the siding and to stay far away from the wood.  About that, I may have peeled some of the paint off of a pillar!  I said it was powerful! Even with all of the power that was washing away the years worth of dirt, grime and mildew there were stains on the siding that required scrubbing.  Of course I used my favorite stain fighter, Oxyclean and a scrub brush. In no time the marks were gone and the siding looked beautiful.

I on the other hand was covered with dirt, drenched in water and my hands and arms were tingling from the powerful vibration of this pressure washer! It was hard tedious work to get this house sparkling clean. 


What I learned 

Removing things that have been left untouched, and undisturbed can prove to be a long painful process. So often we fight to hide the things that require the most attention. The problem the bible tells us is that the thing that are hidden will come into the light, it's just a matter of time.

For all that is secret will eventually be brought into the open, and everything that is concealed will be brought to light and made known to all. Luke 8:17
Maybe it's time for a deep cleaning, to allow yourself to be washed clean by the cleansing love of Jesus.  I must warn you, it may take sometime to get it all there may be some pain but in the end He alone can sparkle you up, make you brand new and remove the stains of memories and regrets from your life.

Paleo Pot Roast with Radishes




Who knew that Radishes could be used in a pot roast?  I was craving good fall apart pot roast, with carrots, onions and sweet potatoes!  Scanned the freezer for the Beef roast and placed it into the sink, found carrots and sweet potatoes in the fridge, but where were the onions? So in a moment of pot roast cravings I grabbed the radishes and threw them into the crock pot.  After a few hours it was ready!  Nervously I opened the lid and spooned out a radish. "If they are gross I will just take them out before I serve it to my husband", whispering to myself. To my surprise they were great! 


Pot roast with radishes


Ingredients 

3-4 lb. chuck roast
2 tablespoons ghee
3 cloves garlic 
1/2 cup radishes cut in half
3 carrots, chopped
2 stalks of celery, chopped 
1 Sweet potato cubed (large chunks)
2 teaspoons cumin
1 teaspoon dried oregano
1/2 teaspoon paprika 
1/4 cup water
salt and pepper

Directions

Season chuck roast with oregano, paprika and cumin. Salt and pepper Add ghee, radishes, carrots, celery and sweet potato into the crock pot.
Add water and cook on low for 6-8 hours.

What I learned

You may think that you are lacking something to serve God. We often have the Moses syndrome, "I can't, I don't have. I need....." It's time to look around and gather what you have and bring it before the Lord and say, "This is who I am.  These are the talents that I have, take what I have and use it Lord any way that you want."

Years ago that is exactly what I did. I took my life and laid it before God and gave it to Him.  Like the 2 loaves and 5 small fish in Matthew I opened my life to Jesus.  What He has done with this average everyday woman and her brokenness is amazing!

Who knew that God could take my life and make something beautiful out of it? 
He did!

Paleo white chicken lasagna

Sometimes I miss Alfredo sauce. You know that velvety, creamy, heart stopping sauce? This is my version of a white chicken and vegetable lasagna, Paleo style. 

White Chicken Lasagna

First make this 
Luscious Cauliflower Sauce

Ingredients
·       1 Tbsp minced garlic
·       2 tablespoons butter
·       5 cups cauliflower 
·        1 teaspoon salt (more to taste)
·       1/2 teaspoon pepper (more to taste)
·       1/2 cup coconut or almond milk

Directions
Cook cauliflower in water until tender, then set aside. Do not drain.

With a slotted spoon put cauliflower into food processor.


Saute garlic with butter then add to the food processor. 
Add 1 cup water and coconut milk salt and pepper, then puree. Add more water until the sauce is smooth. 

White chicken Lasagna

Ingredients
1 large Zucchini-mandolin sliced
1/4 cup diced carrots
1 cup Spinach
1/2 cup broccoli
2 cups cooked diced chicken
1/4 cup cooked nitrate free bacon
2 cups Luscious Cauliflower Sauce

Directions

Layer the zucchini in a glass Pyrex dish


Saute broccoli, carrots in 1 Tbsp coconut oil till tender. Season with salt and pepper. 

 
Place spinach on top of zucchini, then layer vegetable mixture on top. Sprinkle with bacon and cover with 1 cup of white sauce.


Place another layer of zucchini on top, layer with spinach, chicken, bacon. Cover with one more layer of zucchini and finish with 1 cup of white sauce. Sprinkle with seasoning.


Cover with foil, bake at 350 for 40 minutes. Then uncover and bake for 10 minutes. Take out of oven and wait 5 minutes before serving.




Yes, it is as good as it looks! Yummy

What I learned

There many steps to making this delicious dish.  Each of them were required to yield the end result. Sometimes we are tempted to rush ahead and skip through the lessons that God wants us to learn. Our lives are not just a series of unconnected events.  Because He knows the plans He has for us, He also knows what is required for us to get where He wants us to go. 

Slow down, don't be in such a hurry that you miss what He is trying to teach you through exactly where you are today!

The power of a moment

Our pastor invited people to come forward and pray. "Maybe you need more of God in your life, His peace, His presence. Come and kneel at the foot of the cross and lay your burdens down there."

In front of me a beautiful moment began to unfold. A father walked up to the front and then knelt in prayer. His family showed their surprise with tear filled eyes. Then in a moment, I was moved to tears as his two teenage sons went forward and knelt beside their father. 

I have no idea what was happening in their life to cause them to go before the Lord, but I do know that in that moment, this family was in the most powerful position there is. 
It is on our knees where we can begin to understand how powerful God is and how much we need Him in our lives. 
He offers us Rest
Come to me, all you who are weary and burdened, and I will give you rest. Matthew 11:28

My soul finds rest in God alone; my salvation comes from him. Psalm 62:1

We can share anything with Him
Do not be anxious about anything, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. Philippians 4:6

God has power to share with us
But you will receive power when the Holy Spirit comes on you; and you will be my witnesses in Jerusalem, and in all Judea and Samaria, and to the ends of the earth. Acts 1:8

He gives strength to the weary, and increases the power of the weak. Isaiah 40:29

Stress can do funny things to people. I am not saying that we don't have the right to be stressed. Life gives us many curve balls when we least expect them.  It's what happens to us in the midst of them that can send us over the edge! Answer for yourself what you do when you are stressed.

Many of the items on this list are what I do when I am overwhelmed with stress. 
 I hate that I know what triggers the stress yet still allow it to produce disquietude within me. Feeling out of control produces some mighty big anxiety for me. It is in these moments that fear can overtake me, dragging me into the pit! 
I am so glad that God has not left these feelings out of the bible.  Many of our favorites have expressed their feelings of hopelessness, despair, frustration, fear and anger.

Biblical answers for our stress

Solomon his son, “Be strong and courageous, and do the work. Do not be afraid or discouraged, for the Lord God, my God, is with you. He will not fail you or forsake you until all the work for the service of the temple of the Lord is finished.1 Chronicles 28:19-21


When the righteous cry for help, the Lord hears and delivers them out of all their troubles. The Lord is near to the brokenhearted and saves the crushed in spirit. Remember that you are not alone, Cry out to God and abide with Him. The stress will never go away but we do not have to be out of control, let's leave that to God.

Little by Little it eats away

I knew that it was coming. Each time I am with her there are signs of it. A forgotten name here, looks of confusion there, a wrong turn, something is beginning to change and more and more the memory is being eaten away. My mother has Alzheimer's and today I received the call that I have been 
dreading. "We've had an incident with your mom", said the voice on the phone. My heart sank, I readied myself for the explanation. She had been shopping, became confused, felt lost and didn't know where she was. Praise God that enough of her memory was in tact for her to ask for help. 

Little by little her brain is becoming inefficient. It no longer stores everyday information, names and
locations are foggy and it plays tricks on her.    
Today was a struggle, but even in the midst of it God was at work. Yesterday I had a conversation with a dear friend about taking the keys away from mom. Today although it was scary, was such a blessing because she willingly gave the keys up!

What I learned

God is always with us and He is working even when we are at our lowest. Psalm 73:23-26

Paleo Glazed Turnips


You are not going to believe how yummy these are! I was nervous to make them but will definitely will now that I have ventured into turnip land!


Glazed Turnips

Ingredients

· 2 medium turnips

· About 1 1/2 cups plus 3 tablespoons water

· 2 tablespoons butter/ghee

· 1 tablespoon honey

· 1/2 teaspoon salt

· 1/4 cup orange juice

· 1/2 tsp freshly grated ginger

· 1/2 tsp organic orange zest


Directions
Peel turnips, cut into small slices. Arrange turnips in a skillet add enough water to cover the turnips. Add 1 Tbsp butter, 1 Tbsp honey, and salt and boil on high heat, and cook for about 10 minutes. Continue cooking uncovered, until tender and water has evaporated.

Remove turnips from pan.

Into the pan combine 1 Tablespoon butter and honey with orange juice, zest and ginger. Transfer the turnips into mixture, then heat until all of the turnips are coated with glaze.

Enjoy this great dish!

What I learned

New things can be scary but trying them can be half the fun!  Sometimes God call us to step out and try something that we are uncomfortable with so that we can trust him and grow.

Burpees



Burpees

The mere expression brings pain to my mind. They are an exercise that I need to do but do not want to do! Ever feel like that?  

This burpee video shows the ultimate way to do them, I am no where near where this man is! This beginner video is more my style. Regardless the status of my burpee level, I want to be better and stronger than I am now. Unfortunately, this means that I have to do them and do them often!



What I learned

Making changes in our lives spiritually requires work. It takes time to become who God wants us to be. Those daily choices to develop the spiritual habits of prayer, praise, confession and bible study will result in developing spiritual muscles. Soon you will be stronger and more disciplined. 

Finally, be strong in the Lord and in his mighty power Ephesians 6:10

but those who hope in the LORD will renew their strength. They will soar on wings like eagles; they will run and not grow weary, they will walk and not be faint. Isaiah 40:31

I pray that out of his glorious riches he may strengthen you with power through his Spirit in your inner being, Ephesians 3:16


O LORD, be gracious to us; we long for you. Be our strength every morning, our salvation in time of distress.Isaiah 33:2

Five Paleo Turnip Recipes

Last week I went to the store to find turnips and had to ask someone what they looked like.  I am not sure that I have seen one and definitely have not tasted one. 

I found a plethora of information on Alive about turnips.

Turnips
  • Are native to Western Asia
  • Were used for cooking before Potatoes were
  • Are a part of the cruciferous vegetable family
  • Have disease-preventing phytochemicals. Studies have shown that these compounds help the body both ward off and detoxify cancer-causing substances. 
  • Are low in calories 
  • A good source of calcium and iron, and high in vitamin C. 
  • The smaller the turnip, the sweeter the taste.
Turnip Nutrition facts. After reading all of these facts I knew that I had to try some recipes. Here are 5 that I just made.
1. Bacon, Spinach,Tomato and Turnip Salad
I simply shredded the turnips on top of the salad. 
 I love the peppery taste of the turnip!



 Garlic Mashed Turnips
Oven Roasted Turnips
Oven Roasted Turnips sprinkled with almond flour
Pan fried turnips in Bacon fat
2Garlic Mashed Turnips

8 small-medium white turnips (peeled)
2 Tbsp Ghee
1 Tb Garlic
1/4 cup almond or coconut milk
Celtic sea salt
Black pepper

Directions
Peel turnips and cut into cubes, boil till tender. Combine all ingredients into a food processor.

I like it better than mashed cauliflower!

3. Oven Roasted Turnips
4. Oven Roasted Turnips sprinkled with almond flour

One medium turnip
Seasoning of your choice (I like Mrs. Dash or Tajin)
Olive 
Almond flour

Directions
Cut turnip into fries, coat with olive oil, sprinkle with seasoning. (Add almond flour if desired. Bake at 375 for 30 minutes or until crisp.

I liked the ones with almond flour better!

5. Pan fried turnips in Bacon fat.

1 Medium turnip cut into slices
Bacon Fat

Directions
Heat pan with Bacon fat add turnips and cook away! When finished season with salt and pepper.

I loved these!  They hardly made it to my plate! 
Let's just say that Turnips are good for you and tasty!  I am sure that there will be more recipes of this tasty veggie!

What I learned
Just like there are many ways to make turnips, there are many ways to be the Church. For some it means meeting in a small wooden church deep in the countryside. For others it means sitting under a thatched roof in the dirt and for many it means meeting secretly to pray and worship together. 

The church is not where we meet, but who we are. We are the body of Christ.

Can I really do this?


In our office is a gigantic desk! No really it is 84 by 34 inches, weighs a ton and takes up half of the room! 

One of my strengths and weaknesses is figuring things out for myself. Each new endeavor is like a puzzle waiting to be solved. Completing the task increases my endorphin levels as much as working out does! 

Remembering that there was some trick to this desk I scooted under it to take a look at the screws, and began to take them out.  The problem was that they just turned and turned but did not come out! Puzzled, I snapped a picture with my phone and headed off to the Home Depot to see if I could find out what I needed to have in order to remove them.  
Have you been to the fastener aisle?  Thousands of screws, nails, washers, bolts and more overwhelmed my eyes! I left without having any answers to my questions, never asking anyone for help, determined that I would figure it out.
Google has always been good to me so I searched for wood screws and there it was! It felt as though the angels were singing! 

In the back of the desk wall was a cam lock screw that attached perpendicular to another screw. Once it was loosened all I needed to do was push the sides and it would have come right out.  That's what was supposed to happen, but first the very heavy top of the desk needed to be unbolted. To do that, all of the drawers needed to be taken out so that I could get under it. "Can I really do this?"

I pulled out the first drawer, but it wouldn't come all of the way out. "Deep sigh" and puzzled look. I walked out of the room to think on it. 5 minutes later I returned and tried a different drawer, examining the screws and then, "What is this", I muttered out loud. There all along was a toothpick size white lever on each side of the drawers. Just like that, the drawers came out, and I was able to remove the bolts and dismantle the desk. 

Yes Jann, you can really do this!

What I learned

God has given us many tools to help us figure out these puzzling lives. There are times that we can feel overwhelmed by the choices and end up walking way without having any solutions. This is when we need to go to God's Google- His word. 
All Scripture is inspired by God and profitable for teaching, for reproof, for correction, for training in righteousness; 2Timothy 3:16
There is nothing that He can not reveal to us if we look to Him for the answers.

He will be with us!
The Lord himself goes before you and will be with you; he will never leave you nor forsake you. Do not be afraid; do not be discouraged. Deuteronomy 31:8

He knows what we need
Your Father knows what you need before you ask him. Matthew 6:8

He gives us Wisdom!
If any of you lacks wisdom, you should ask God, who gives generously to all without finding fault, and it will be given to you. James 1:5

Questions and Answers

A huge weight has been on my heart. My mother has Alzheimer's and lately her short term memory has been spotty at best. Every time I am with her it is necessary to choose my words wisely, so not to upset her, did I mention she also can be grumpy? In the midst of this there have been many questions that have arisen for me. It's amazing how God has given me answers and blessings along the way

Questions


How do I care for her when she doesn't remember simple things or becomes agitated. On vacation I spent some time reading a book, Creating Moments of Joy. The author helped me see how to care for my mom in a kinder, more loving way! 

What can be done to keep her in her independent living situation for as long as possible? The organization, Elders helpers is able to send a nurse to her home to consult with my mom and set up all of her medications. The nurse is kind, gentle and knowledgeable. My mom loved her!

What medication for Alzheimer's should my mom be taking? After meeting with her doctor it was revealed that Aricept, the medication that she was supposed to be taking had been discontinued in her records! Well that answers many questions!

What I learned

The weight has been lifted. God has blessed me with answers and surprises! 

The Doctor's office called and changed the appointment. This meant that we would meet with the nurse first and the Doctor the next day. What a blessing because it gave me time to formulate important questions and time to mentally rest after a tough couple of hours with the nurse. God knew that I needed that extra time.  

The other blessing came in the discovery of the missing medication. Thank you Lord for prompting me to ask the question!



O Lord, You have looked through me and have known me. You know when I sit down and when I get up. You understand my thoughts from far away. You look over my path and my lying down. You know all my ways very well. Even before I speak a word, O Lord, You know it all. You have closed me in from behind and in front. And You have laid Your hand upon me. All You know is too great for me. It is too much for me to understand. Psalm 139:1-6

God knows what we need and blesses us abundantly!
