I am starting a new food focus. It is called the Paleo diet. I am just learning about it but what I have gleaned so far comes from this web site.
Paleo Basic facts
- Eat Fresh unprocessed food!
- fruits
- vegetables
- meat
- some nuts
- some oils
- Do not eat dairy
- Do not eat grains
I know what you are thinking, no Greek yogurt? No cheese? No quinoa? My thoughts exactly. Leaving those friends for a while will be tough but, I love the idea of eating fresh, uncompromised food. I'll let you know how it goes. It's kinda of like going back to the basics!
Once a week I will be sharing what worked and what didn't!
Tonight, the first night of this endeavor, I made a recipe that my daughter Lissa shared with me. Spicy orange chicken and jalapeno cauliflower rice.
I was skeptical particularly about the cauliflower rice. When I read it in the recipe,
I said, "what is that" out loud! You actually grate the cauliflower and then brown it with onions and garlic.
The recipe was a success. It turned out well and I will make it again.
The thing I love about this new food focus is that the food I prepare is to be in its purest form. It reminds me that we as Christians are to be to be striving to be blameless and pure.
And this is my prayer: that your love may abound more and more in knowledge and depth of insight, so that you may be able to discern what is best and may be pure and blameless for the day of Christ, filled with the fruit of righteousness that comes through Jesus Christ—to the glory and praise of God. Philippians 1:9-11
