Paleo white chicken lasagna

Sometimes I miss Alfredo sauce. You know that velvety, creamy, heart stopping sauce? This is my version of a white chicken and vegetable lasagna, Paleo style. 

White Chicken Lasagna

First make this 
Luscious Cauliflower Sauce

Ingredients
·       1 Tbsp minced garlic
·       2 tablespoons butter
·       5 cups cauliflower 
·        1 teaspoon salt (more to taste)
·       1/2 teaspoon pepper (more to taste)
·       1/2 cup coconut or almond milk

Directions
Cook cauliflower in water until tender, then set aside. Do not drain.

With a slotted spoon put cauliflower into food processor.


Saute garlic with butter then add to the food processor. 
Add 1 cup water and coconut milk salt and pepper, then puree. Add more water until the sauce is smooth. 

White chicken Lasagna

Ingredients
1 large Zucchini-mandolin sliced
1/4 cup diced carrots
1 cup Spinach
1/2 cup broccoli
2 cups cooked diced chicken
1/4 cup cooked nitrate free bacon
2 cups Luscious Cauliflower Sauce

Directions

Layer the zucchini in a glass Pyrex dish


Saute broccoli, carrots in 1 Tbsp coconut oil till tender. Season with salt and pepper. 

 
Place spinach on top of zucchini, then layer vegetable mixture on top. Sprinkle with bacon and cover with 1 cup of white sauce.


Place another layer of zucchini on top, layer with spinach, chicken, bacon. Cover with one more layer of zucchini and finish with 1 cup of white sauce. Sprinkle with seasoning.


Cover with foil, bake at 350 for 40 minutes. Then uncover and bake for 10 minutes. Take out of oven and wait 5 minutes before serving.

What I learned

There many steps to making this delicious dish.  Each of them were required to yield the end result. Sometimes we are tempted to rush ahead and skip through the lessons that God wants us to learn. Our lives are not just a series of unconnected events.  Because He knows the plans He has for us, He also knows what is required for us to get where He wants us to go. 

Slow down, don't be in such a hurry that you miss what He is trying to teach you through exactly where you are today!

Show me the way

The mid 1970's and I am totally smitten with Peter Frampton! From his curly long locks to his sweet voice, I sing his songs over and over wishing that he would fall in love with me!


It is amazing how those songs, stick with you. This week during spinning class, one of Peter's songs, "Show me the way" was played. It was all I could do not to sing it out at the top of my lungs! Luckily I had a hard time breathing, let alone singing. During the chorus though I couldn't hold it in any longer and began singing, 
I want you, show me the way everyday want you, show me the way night and day. I want you day after day, hey, ohh.




What if we sang like this to the Lord? 
What if we proclaimed, I want you to show me your way, night and day? 
What if we like David pleaded with God?

Show me your ways, Lord,

    teach me your paths. 
Guide me in your truth and teach me,
    for you are God my Savior
