A cooking plan

After my last blog I had several friends ask how to prepare so many meals at 
one time.

Organizing similar ingredients that you can prep at the same time is key to making this go by quickly.

On my counter I placed a bounty of ingredients
Onions
Bell peppers
Carrots
Celery
Sweet potato
Spinach
Zucchini
Brussel sprouts
Turnips
Spaghetti squash
Frozen chili
chicken stock(from the last chicken I made)
chicken brats
roast
eggs
coconut oil
spices
coconut aminos
lots of plastic freezer containers and labels

The first thing I do is prep the onions, carrots, bell peppers, celery and sweet potato slicing them into rustic slices and prepping the spaghetti squash

Turn the oven on to 350 degrees. Place the spaghetti squash in the oven till tender about 30 minutes.

Spinach quiche Make a crust with 1 cup almond flour and 1 egg. mix together and place into the bottom of a small glass Pyrex dish. Bake for 10 minutes
while baking in a blender (ninja) place 1/4 cup onions, 1/4 cup bell peppers, 1 cup spinach, 1/4 cup water, 6 eggs and salt and pepper. Take crust out of the oven and pour into pan. Return to oven and bake for 25-30 minutes.

Next, make the Pot Roast. In the crock pot goes carrots, onions, sweet potatoes and seasoned frozen roast sprinkled with amino's. On low for 5 hours.

Then, its the Brats and peppers. in a frying pan add bell peppers, onions, coconut oil and some sliced brats saute till just browned.

While the brats and peppers are cooking start the Soup with brats. In a saucepan place 2 cups chicken stock, 2 cups of water, sliced brats, carrots, sweet potatoes and onions simmer till done. 

Take the Spaghetti squash out of the oven and use a fork to gather the squash noodles. Place some squash into a plastic container and add chili over it. (I have also used homemade spaghetti sauce).

Cut the Brussel sprouts in half place in bowl add olive oil, 2 TB water and spices. Place flat side down onto parchment lined cookie sheet and bake till browned. (20ish minutes). Then get started on the turnips

Next, Mashed Turnips. Peel the turnips, cube and place into boiling water.  When tender place into blender or (Ninja) add 2 TB butter, 1 TB garlic, 1/4 cup almond milk, salt and pepper and blend. 

Zucchini Muffins place 1 zucchini in (ninja) pulse, add 3 eggs, 1 tsp vanilla, 1/4 cup melted coconut oil, 1 ripe banana, 1/4 cup honey and blend. Add 2 cups almond flour, cinnamon, 1 tsp baking soda and baking powder blend.
Add in by hand 1/2 cup frozen blueberries. Bake for 25 minutes.

When the roast was done it was cut and placed into dishes that had the mashed turnips, and brussel sprouts. 

Phew! That sounds like a lot of work!! In 2 hours all was done except for the roast. In that time I was able to package 20 meals that we can use any time and feel confident that they are good for us!


Most of the containers I use are from Costco.

What I learned

When there is a plan it is easier to get things done.

God has given us a beautiful plan laid out for us in His word, the Bible.  Following His plan may seem like a lot of work but in the end will reap a harvest of blessings in our lives.
